I've been asked to make 3 tier all sponge wedding cake, the bottom and middle tier are normal sponge but the bride has asked for the top tier to be diabetic for her mum.I've test run one tonight using canderel yellow but it hasnt really worked, has anyone got a recipe for a 6" square diabetic sponge?I'm really worried I'm going to have to say its not possible!the wedding is 28th dec so havnt got long!

or apparently flour is not very good either so you can use coconut flour:

Alternatively the cake could be a cake mix made with diet soda?
