Hi guys. I am sorry if this question has been asked before. For a grooms cake (flat helmet cake that I am going to do star-tip decorating technique) how many days before a Saturday wedding can I start decorating it?
side note: I have 300 cupcakes to decorate and I am waiting until Friday to decorate those....so I wanted to see if Thursday would be OK to decorate the helmet cake? I just don't want it to get dried out.

I usually start 3 days before, if its refridgerated it will stay fresh

Once the icing is applied, it's fine at room temperature. The air can't get to the cake to dry it out. Refrigerating can cause cake to dry out.
