Need Help With Leveling This Cake!!!! Asap

I baked two 12x18 Sheet cakes. I went to level them and the cakes were frozen and I thawed them. The tops are gummy. I tried to level one of them with the old Wilton Leveler and it just gouged it all up. What do I do? Let it dry out? I always bake ahead freeze. Can anyone help me? Do you have to level before you freeze them? My husband was going to buy me an agbay for my anniversary next month. But if it will not work on a cake after it is forzen and thawed then maybe I should not get it. Is the agbay sharper?

I freeze my cakes and then use the Agbay after they thaw. In my experience it does not work with frozen cake. I am a hobby baker and I don't make that many cakes but the Agbay was so worth it.

The cakes are unthawed but the top is gummy and kind of wet feeling.

I level my cake right out of the oven so that is not an issue with me...Try thawing the cake and then level...as for the gummy stuff..I take a serated knife and scrape it acroos the cake until it is no longer gummy.White cake seems be be the only cake that does this...
