I am piping a quote about love on a fondant covered top tier of a wedding cake.
Would you use royal icing or buttercream, and if you have time, the reason behind which is better............

I'm curious to see what a pro will say. I think buttercream that is thinned enought to write script will not drip down your cake so that's good. But royal gives a very nice finish when it is dry. You could petal dust it and not bother the writing.

Let's see what others say.
