Gluten Free Cakes - Advice

Not sure if this is the right forum to put this request but I have an enquiry about which gluten free cakes I can provide in my advertised flavours. Are there any recipes that just will not work without the gluten in the flour and baking powder. Ie can I just swap ingredients in my regular recipes for gluten free ones?

Gluten free cakes are a specific baking science and you cannot just Swap-out regular ingredients.You have to find a good recipe and try it..Then you have to source out the special ingredients which can be expensive if you don't have a wholesale supplier to buy from.Betty Crocker just put out a new line of gluten free mixes but here they are very expensive..Triple the price of a regular mix and they are quite a bit smaller in package size.

Unless you are a licensed baker and specialize in gluten free,Dairy-free,Nut-free etc...I wouldn't offer the specialty cakes as the cross contaminiation from regular tools can be dangerous and cause a lawsuit.
