I have been trying so many different vanilla recipes but can't seem to get the perfect one for cupcakes. What scratch vanilla recipe do you use to get a moist, light vanilla cupcake?

I always use

6oz/150g Self Raising flour
6oz/150g Sugar
6oz/150g Butter
3 large eggs (must be large) beaten and mix with 1tsp vanilla extract

Cream butter and sugar until white (very important)
Add eggs slowly and ensure fully combined before adding more.
Add flour and mix for as little time as possible.
Fill cases about 3/4 full bake for about 16mins

I also find you get a better lighter cake if you use muffin cases rather than the smaller ones.
