I asked a friend with a restaurant to order me some hi ratio shortening. He order something called Mr Chips icing stabilizer. It looks like huge flakes I haven't been able to find much info online about this. Can I use this to improve my butter cream or have i blown my money.

Mr. Chips Icing Stabilizer is listed under Shortening & Oils:

http://fsiaz.com/products.asp?pcat=Shortening %26 Oils

What are the ingredients?

Is there a customer service # to call?

The only info I can find is about a tablespoon to a batch of buttercream. It will help it hold up in heat, crust better. I just now have 50pounds. Lol

Well, then .... It's not a hi-ratio shortening, but rather an additive which can't be used as a hi-ratio substitute in frosting recipes.

Can your friend return it and get Sweetex or Alpine hi-ratio shortening?
