Uneven Baking In Convection Oven

Whenever I bake cupcakes or cakes in my commercial convection oven, the cakes are always uneven or domed. The cookies also don't seem to flatten out as they bake. I've haven't baked a lot in convection ovens and am wondering what I'm doing wrong. I've tried lowering the temp by 25 degrees, but that didn't really help. The oven itself is level so now what?

The fan may be too strong. Two things... Can you turn down the fan or can you re-position the shelves? In my ovens, one configuration blows them and the next position (all shelves one up) makes them perfectly.

The fan can't be turned down. I haven't tried repositioning, but I will. Thanks
