I am using WASC recipe, I have meringue powder, is there a way to use that instead of eggs? or what would happen if I didnt use any eggs???

I've never tried this before but it's on my "just in case" list. Substitute 1 tablespoon of mayo for each egg. If you try this, please let me know how it turs out. It makes sense, sort of. After all, mayo is basically eggs and oil.

Substitute applesauce for the eggs. However, I believe you will need to add more fat since you wouldn't have any yolks in the cake.

I've used mayo. It's 1/4 c to substitute each egg. There will be a difference in texture. But it does work. I have to add extra simple syrup.

There is actually a recipe called Chocolate Mayonnaise Cake that people love.

I use applesauce to replace oil in all my cakes.
