My red velvet cupcakes didnt dome, and I havnt even taken them out of the cupcake pan and theyre already pulling away from the liners. Any ideas on how I can fix this before I put the next batch in? Anyway I can alter the recipe without having to make a whole new batch?? This is the recipe I used:
3 1/2 C cake flour
1 1/2 sticks unsalted butter
2 1/4 C sugar
3 lg eggs room temp
6 TBS red food gel (i used more like 2)
4 TBS unsweetened cocoa
1 1/2 tsp vanilla
1 1/2 tsp salt
1 1/2 C buttermilk
1 1/2tsp vinegar
1 1/2 tsp baking soda

I followed directions to a t. I weighed instead of measuring the flour.. I dont know where I went wrong?? icon_sad.gif

Did you ever figure out what went wrong? The same thing happened to my red velvet cupcakes. I used Martha Stewart's recipe.

nope... I crumbled them up and made cakeballs with them. Noone could offer any advice, so I scratched it, and called it a day. icon_sad.gif

I like Paula Deen's recipe. It's the same as CakeMan Raven's Red velvet cake.

Paula Deen's recipe is the only one I use (doctored with just two teaspoons more cocoa powder) and they always dome perfectly and taste great.
