I have a cake due in a couple of weeks and I would like to do something like this with the top tier:

The colors theme is red, white and brown. So this idea seems like it would work beautifully. Since they asked for raspberry buttercream and it is pink I thought of covering it up with white fondant. Is it ok to pour ganache over fondant though? and how do I get it to look neat and polished like this? and not messy and runny??? any tips??
