Another Pricing Advice Question...

First off, I'm not cheap when it comes to my cakes. I start at $10 slice and this past year started really putting all of my years of sugar flower training to real use. So, I get a consulation for a bride who wants a Sylvia Weinstock style cake. 6 ft tall, feed 300, and cascading wrap of sugar flowers, which will have to be colored. Additionally she wants some gold details and isomalt sparkly gems. I am totally stumped on where to price this! I know she considered SW, but due to shipping and travel, wanted someone local so her event planner recommended me. Great ~ but how do I not shortchange myself here? I know I will need special construction, assembly on site and delivery fees. The rest, no idea. I tried calling some other cake designers with no call backs (yet). Assume over 1000 roses and another 1500+ various foliage for the entire cake, if that helps.

Anybody have any pricing advice for me?

Depending n the size of the roses, I charge $2-6 each. Foliage if it's truly simple, $1 per piece.

Plus the cost of the cake.

Looks like you're in the $6,500 - $10,000 neighborhood.

And it's such a nice neighborhood.
