Weight Watchers Soda Cake & Fondant??

Some of you may be familiar with the WW diet coke cake where you mix a boxed mix with one can of diet pop and that is all you add. The cake comes out moist and dense at the same time. Has anyone ever used this recipe for a decorated or stacked cake? We are having a family get together for Easter dinner, and I have been asked to bring dessert. Many of the family members, including me are currently in a weight loss program, and I'd love to bring a cake that is at least a litte more health concious. I'm just not sure if the cake can handle any fondant decor. TIA!

We often use club soda in vegan/egg-free baked goods as an egg replacer, the concept should be the same. We've stacked up to 3 fondant-covered layers of vegan cake (10/8/6) without any issues, but as you've seen the cake is considerably heavier.

It's certainly not any healthier than traditional cake though...even traditional cake is actually not too bad for you, it's the frosting you need to worry about.
