I tried looking in the big Buttercream thread but for some reason it won't show anything past a few pages. But anyway.. I Just received Sugarshack's DVD's and I want to make her buttercream frosting. Of course she makes enough to fill the 5QT kitchenaid bowl and for the cake I'm making today I won't need that much. How long will the extra icing last in the fridge? Or do I freeze it?

It lasts a pretty long time. I use a buttercream with real butter and cream cheese and I froze a batch for a month once. When you thaw it, it needs to be re-beaten but it tasted as fresh as the day I made it. It lasts a long time in the fridge too. Just make sure it's well covered and air tight.
