I am a bit of a novice but have been asked to make a wedding cake for a friend. They want a 3 tier cake with pillars inbetween tiers. They want sponge cake with buttercream and jam filling. Would this be possible? Or would the cakes squash under the weight of the top tiers?

Yes, because it is your support system that is holding the cake up, not the cake itself. You can stack any type of cake with the right support system.

Wilton Pillars/Stacked combo:

SPS (highly recommended)
