Does anyone know if you can add fruit to a cake mix? i.e. strawberries to a strawberry mix.

Of course you can. Just chop up your fruit and throw it in. A lot of recipes in the Cake Mix Doctor have fresh or frozen fruit added to the mix. It's a good book if you like doctored cake mixes.

If you add some kind of fruits you need to reduce the amount of liquid you use, especially strawberry. I'm not sure how much, hopefully someone else will chime in soon!

I found that it depends if it is frozen or fresh fruit. They way I do it, is to add about 1/2 or 3/4 of my liquid, then finish my mixing, including the fruit. If I think it is dry and needs more liquid I will add the rest. icon_smile.gif
