I made a lot of Red Velvet Cupcakes yesterday. I only have a regular sized home oven so I kept having to rotate cupcake trays. Filled trays waiting to be baked were all refrigerated.
This morning I opened the fridge and saw that I had forgotten to bake one tray of cupcakes. I preheated the oven and popped it in. It baked up perfectly. No difference in taste or quality from the batch I baked last night.
I'd heard it was possible to refrigerate cake batter but had never tried it before.
BTW, I used Cakeman Raven's RVC recipe.
