1. What kind of filling and how thick do you make it so that it looks like the pieces of cake people cut for tastings? Like it looks so nice and put together. . .

2. Do you put the fondant on the cake before you use an impression mat or do you impress and then put it on? I have tried to use a brick pattern but felt like I had to push super duper hard and still got no where.

sorry, I can't answer your first question, but I can answer the 2nd one:
I use the impression mat before I put it on the cake. Just spray your mat with Pam and put it over the fondant. Then hold it in place and roll your rolling pin over it. You will get a good impression.. Then don't smooth too much once you have it on the cake...

Do you use that even with the diamond and get it to line up correctly?! Like to do quilting?
