I wanted to make a pie with shortbread crust, but I'm not sure what would be the best type of filling. Ideally, I'd like to do some kind of chocolate. Any ideas? TIA! icon_smile.gif

Myself, I'd do a bittersweet chocolate custard pie, as a foil to the sweetness of the shortbread.

Not everyone likes the intensity of dark chocolate, however, so it might not appeal to younger or less chocoholic folks.
