I wanted to make a pie with shortbread crust, but I'm not sure what would be the best type of filling. Ideally, I'd like to do some kind of chocolate. Any ideas? TIA!
Myself, I'd do a bittersweet chocolate custard pie, as a foil to the sweetness of the shortbread.

Not everyone likes the intensity of dark chocolate, however, so it might not appeal to younger or less chocoholic folks.
