Some ????'s About Cheesecake

I have someone who requested a cheesecake as a grooms cake. She wants it to be an 8 inch round stadium cake. Here are my questions:
1. Can you make regular cheesecake and then ice it?
2. Isn't it going to be hard to sculpt, ice, and deal with?
3. I assume it has to be refrigerated????

Have any of you ever done this???? I have never made a cheesecake before and maybe there are recipes I don't know about. I would so LOVE and would be greatly appreciative of any help you can give me.
