Tasting - Experimenting With Recipes?

I have a tasting on Oct. 16 and they are primarily interested in red velvet. I'm weird about food coloring, so I would like to experiment with beet juice for coloring, but I also plan to make them the cakeman raven recipe because I'm confident it will turn out wel. Is it strange to offer 2 red velvets for a tasting?

Same thing with the WASC. I aspire to do an awesome scratch, but I'm afraid it will be too dry, so I'm inclined to use a box WASC, or maybe offer both... one as a white chocolate and the other as a white almond? (I've had plenty of practice with my scratch yellow and chocolate, never really played with the scratch white).

Play with them ahead of time so you know that they work well. As far as the 2 different red velvets...if you want to offer both, then do. Just explain that one is a natural red and the other is an artificial red. You can always say that you offer both because some people prefer to stay away from articial colorings.
