Ok, so i have a 'strip' of letter cutters, what i want to know is, How do i get the letters out when i have them cut without them breaking up?

Make sure you use gum paste and not fondant. Fondant is "wetter" and will stick more. Also, your gum paste needs to be rolled very very thin - that way no excess will get jammed up in your cutters. I always knead shortening into my gumpaste as well and never have any issues with sticking. If you are still having problems, you could lightly dust the cutters with cornstarch, but not too much because it can dry out your gumpaste too fast.
