Hey guys
Does anyone have the secret to great tasting buttercream frosting for decorating? I have a recipie that I use to frost cakes that is kind of on the soft side but I need a nice stiff frosting for decorating and to frost cupcakes. When I use my reg recipie the icing doesn't hold up well when I pipe it. I tried to add more powdered sugar but then it gets overly sweet and gross tasting. I tried a recipie with shortning and powdered sugar and it didn't taste like anything just bland. I want a nice frosting like you see on the cupcakes at the bakery. Can anyone help??! Also is there a food coloring that doesn't leave an after taste? Everytime I dye my frosting it taste weird yuck!
What is the recipe you use now? Maybe someone can give you some suggestions on how to tweek it?
I use the Buttercream Dream recipe from this site and it's really yummy. I get lots of cake orders based on that frosting alone! It contains both shortening and butter.
Not sure about the food coloring question - I only notice a taste difference on the darker colors.

The recipie I use now is cream 2 sticks of butter and add powdered sugar 1 cup at a time until its the right texture which works for frosting a cake or as a filling or under fondant but to get that nice stiff texture for decorating I have to add too much powdered sugar
IndyDebi's buttercream recipe is very good...it's in the recipe area...
