So I finally got ahold of someone at the Health Dept today that actually had some info on becoming legal!
He said that in my county I really dont have to do anything at all as long as I have no employees and no store front.
The only catch is that I use fillings in all my cakes that must be refrigerated and in order to do that I would have to have the kitchen inspected. He said that they would not approve just a standard fridge
But I use my church kitchen and they do have a smaller commercial fridge, the counter type, so Im hoping that will let me slide by.
Cant wait to get some business cards and start advertising!!!

Congrats! What county are you in? I'm in Jackson County and they make it pretty difficult for bakers to get licensed.
