What is the max amount of time I have between icing and applying fondant to a non-refrigerated cake. I am worried about the cake drying out, and not tasting fresh. Time constraints are a problem.

Once you have crumbcoated your cake you have sealed in the moisture and don't have to worry about it drying out. I let my cakes settle after filling/crumbcoating for at least 3 hours but I know many who leave them overnight. HTH Cat
