Why Did My Cake Filling Change Color???...

Hi Cakers!

I am puzzled?! I made a Shoe cake this week that had Cream colored Bavarian filling. When the cake was cut I noticed that the filling turned brown in color?? The cake was a Chocolate cake with Chocolate chips. Do you think the filling change colors because of the dark cake?

Also, I could not TASTE the Bavarina filling? It tasted just like the chocolate cake? This was my first time using a filling other than BC, so I did not use a lot of the filling cause I was a little afraid?? =)

The cake tasted very good, but it still bothered me that this happened!

Any suggestions?

as for not tasting:

consider Bavarian Creme filled doughnut.

Big glop of creme, white dough, and a modest amount of chocolate frosting on top.

I dare say that if you used only a little filling vs. a big ol' chocolate cake, the flavor of the cake completely overwhelmed the creme filling.

now as to why it changed colors -- i have no idea.

was it homemade filling or premade sleeve of filling?

It was a Sleeve filling from H & H.
