Will it melt into or disintegrate? Looking to find a clean way to get one word onto a cookie, I don't like my writing.

There shouldn't be an issue if you allow the glace to dry before applying the fondant or gumpaste.

I would not use gumpaste on something that a person will bite into, it could crack a tooth. Use fondant instead and wait til coating dries before applying the fondant
