How long is too long for a cake to be stored in the refrigerator? Can I store it in the freezer? I have to bake a cake about two weeks before the delivery date. Is that possible?

You can bake and wrap and freeze for up to a month (some say longer) before use. I wouldn't put it in the fridge because it can dry out your cake. As for once it's covered with the final coat of BC or fondant...I know others here have had luck with this but I have not. The cake didn't fare well after thawing.
