"healthy" Breakfast Cake

An event I was previously making a cake for has been moved to an AM breakfast thing. I'm planning to make a fruit basket cake with stabilized whipped cream for the piping. For the cake component, I would like the "healthiest" cake possible so that there are no objections to eating this thing in the morning. I have no idea why people think donuts and muffins aren't cake.

Anyhow, whole grain, unbleached, wheat germ, high fiber... whatever you got, bring it on. It should also be somewhat dense so I can hollow it out and fill with fruit.

I should also add that the crowd is over age 60, so the lower the fat & cholesterol, the happier they will be.

what about a recipe for morning glory muffins, but just make it into a cake. I dont have a recipe but there are some on all recipes.
