I have been trying to convert cupcake recipes to cakes with disastrous results- - today I baked 5 cakes that had to be thrown out. They were all gummy and terrible no matter how long I baked them for. I tried four different recipes that work well as cupcakes. The batter measured approx 3 cups and I'm trying to make a rectangular cake - I baked it in 7"X9" and 12"x9" pans.. I tried using less batter but made no difference either.
One point - these cakes can not contain any egg or dairy products.
If anyone has any advice at all I would really appreciate. I wasted a LOT of ingredients today and am none the wiser..
I would just try searching for vegan cake recipes rather than trying to convert cupcake recipes to cake recipes.

use an egg replacement mix. It works wonders!

Lisapeps - I am familiar with those sites. The reason I tried converting cupcake recipes to cake is that I have tried many other vegan cake recipes (I own loads of books) and I have yet to find a go-to basic white /sponge cake type recipe.
Carol Fenster's cookbook might be helpful too - check on Amazon.
"Babycakes" - look for that book on Amazon - GF and I believe vegan recipes too.
