I have a three tier bday cake due on Sat plus 24 cupcake. I am having knee surgry on Friday. How early can I bake my cakes. They will be covered in fondant. I am just trying to get a head of the game, but dont want to bake to early for obvious reason.

As long as you have a freezer, you can generally bake a couple of weeks in advance.

Bake your cakes and wrap them in plastic wrap and freeze. I try to do this with all my cakes it helps keep them moist and saves me time. Just remember to leave the plastic on when they are defrosting.
