The brides father has been in a bad accident and the wedding which was suppose to be tomorrow (Canada Day) has been postponed. I have 90 red velvet cupcakes and a 6" cake with creamcheese icing. Can I freeze creamcheese?

Wrap the box with plastic wrap really well and you should be fine.

I always buy TONS of cream cheese when on sale and pop it in the freezer, no problem!

that's a relief because everything that I've read said that it will separate and turn grainy when thawed. But at this point I don't have anything to lose so I'll try it. Thank you

When you take it out of the freezer, leave it covered until it defrosts. If not, moisture will be pulled in from the air.
