Hello fellow CC'ers. I have been doing cakes for a few years now and was asked a question that I just can't answer. Hoping someone can help.

My sister is finishing the Wilton 3 class. She plans on baking her cakes tomorrow (sunday) and decorating in class on Tuesday. She wants to know if she can freeze them covered in fondant, decorated that night after class. She plans on thawing them for a baby shower over the next weekend. I have never froze a cake with fondant and decorated. Can this be done at all? I'd worry about the fondant cracking. Any help would be greatly appreciated. Thank you!!

I freeze my fondant decorated cakes all the time. When they are defrosting they tend to "sweat" a bit, but if you DO NOT touch them they will dry and defrost nicely left out on the counter..
