I'm sure this must be already listed somewhere, but I can't seem to find it. How many days ahead of time can I make a fondant covered cake? I know it can't be refrigerated, so do I cover it with plastic?

as long as it doesn't have a filling that needs to be refridgerated I have heard that as long as it is iced and coveren in fondant that it could be good up to a week.. I have never done that but I have made it up to 3 days prior to the due date and it comes out great!

I usually cover no more than 2 days before delivery although I've had fondant covered cakes at home that we eat on for a week that were kept at room temp. and they stayed moist and fresh until the last piece was eaten. I never refrigerate my cakes. If you keep it covered it will stay fresh I know for several days.
