Forgot The Merinque Powder... It Is Ok

I made 2 cake this weekend and I just realized I forgot the merinque (sp) power. Hubby was like this icing tastes different and is so smooth what did you do different. I said I dont think anything and then it hit me the powder. I actually love the taste without it.

I used the standard Wilton recipe on a 3 tier baby shower and then a 1/2 shortening and 1/2 butter on a fondant covered cake. Will these cause problems for me tomorrow?

I use the Wilton recipe without the meringue powder and I've never had a problem. I like the taste better without it too.

I have never used the meringue powder and i've never had a problem with it. I know there is a reason they say to use it, but since I don't have issues w/o it, don't fix it if it ain't broke icon_smile.gif

I never use meringue powder in my buttercream. I think it makes it taste nasty and I can't see a reason for it myself.

I don't use meringue powder and my frosting crusts just fine.

Thanks ladies...sometimes you do things because that is the way you are taught even if you dont know why.

I agree it really changes the taste and It is tastier and smoother without so I wont be using it anymore.

It was sooo smooth and just didnt have that after taste ... you will like it.

Wilton advises to use meringe powder to add body to royal icing, meringue, and boiled icing - also stabilizes buttercream:

But I only use it when I make the Whipped Cream b/c frosting, not in any other b/c recipes:

Same here. For years (decades) I saw MP on the shelf and never knew what it was for.
