I am the absolute description of a novice cake decorator...but I am being ambitious and am going to try to make a 2 level fiesta themed cake for my hubbys bday. I am planing on using fondant and am gonna try it out with my daughters cake next month. So heres my question...

How do you level a cake?

I know that is like the most basic thing and i have heard about using floss and have seen decorators just trim the top with a knife, but did they just eyeball it? Is there some trick that you all learn while learning how to decorate?

I can take direction on ANYTHING! I love step by step instructions to begin with because I will follow them to a T....so direct away pros.....please, direct away! lol
