I am working on a bridal shower cake for tomorrow, and nothing is going right. I put a baked cheesecake layer in between two cakes and crumb coated. Everything looked fine. Let it settle overnight in the frig, now applying the finish coat and all kinds of bubbles are cropping up. This has never happened before, not sure what is going on. I put it back into the refrigerater and it has stopped, but i'm so concerned that when I deliver the cake, i'll have a blow out, or it will just look terrible. Any ideas why this is happening. I've done the cheesecake thing before, but I just piped the frosting on, never done it smooth, just wondering if the gasses from the cheesecake could be doing this?
