I do when I need to knead color into the fondant/gumpaste just to keep the staining down. Otherwise I make sure my hands are clean and dry before working with it and make sure not to touch anything else until done. If I have to stop during the process of making fondant or any edible parts on the cake then I go back thru the cleaning drying process before touching it again. With pieces I know won't be eaten, usually the ones I have dry for a week or two before using, I don't worry as much but the pieces I know will be sliced and served I am ultra careful with staying clean.

Thanks for your reply. I was just wondering, because I've tried to make some figures wearing gloves and I didn't like it.
