Does anyone know of any "starting a cake business" classes in the NY/CT area? I am a pastry chef, but need more business know how. I would love something that also hits upon the home business.

Check your local SBA. It's a great way to get some information on starting your own business. Most of it is pretty generic, but it's better than nothing and it's free. Go to sba.org

I think I'm going to be taking a couple classes though the local Jr college. They have a great program made for business owners. You go to class maybe once a month, everything else is in your own time the the professor comes to you. I'm really excited!
