What Type Of Flowers To Use On Cream Cheese Icing?

I'm making my very first wedding cake as a gift to a friend. His bride to be wants italian creme cake (minus the nuts) with cream cheese icing. How can I make the cake a little denser so it won't be as crumbly? Add a little more flower and another egg? Also, which type of "material" to make the flowers out of? They want red and white roses cascading over the top and down the sides of the cake. I was originally going to use fondant flowers when they were going to have buttercream.

Any help would be greatly appreciated!!!!
