I made a butter cake from scratch this morning from the Cake Bible. I have never made this kind of cake before. The flavor is amazing but it is quite dense and very moist.
I did the usual test after the suggested bake time and the toothpick came out clean but still now that I had a taste (the top from leveling) I am just not so certain. I am serving it to family and friends this weekend as a test run of a new recipe, but don't want to serve it if it isn't how it is supposed to be.
You can't judge a cake by the bit you level off at the top. If you torte it, however, that should show you whether it is truly done or not. However, a butter cake is a dense and moist cake, almost like a pound cake.
