How Would You Suggest I Do This Cake?

I would not assemble at venue
Pick a good dense cake suitable for carving - not light fluffy sponge.
Start off with a board with a central dowel (long enough to go through base - to neck and at least 3/4 of way up head) glued in
Place bottom cake on board (pre-drilled with hole to fit over dowel)
Carve to shape (up to the neck area)
Crumb coat - I would use ganache, but you might prefer soemthing else
Place over dowel
Cover with fondant - smooth
Place skewers in to support head - cut to length
Make head on a separate board (pre-drilled with hole to fit over dowel) -
I'd probably put another board in head across widest part (pre-drilled again)
Carve to shape - cover with fondant
Add fondant + tylose ascents eg. arms etc
It will travel fine if done like this - I have shipped 3D cakes air-freight without them shifting

Don't know how many you want it to serve but if it's not a great number I would do the head with RKT, eliminates a top heavy problem.
