Ditto on the bacon grease can and wilted dandelion greens was called Polk Salad, Anyone remember the Elvis Song, Polk Salad Annie?

I am a nurse and I still say no one ever called me shortening

My shortening is non-hydrogenated and trans-fat free with great results.
I call hydrogenated oils "heart attack on a plate". I agree..very harmful.

I also only use trans fat free shortening and would never use anything else.
