Hi Everyone,
I'm guessing that this topic has been posted before, but I can't find an answer to it anywhere. Please pardon me for posting it again, if it's a duplicate.

I have been doing cakes for about 3 years, and the two issues that I encounter every single time are that I can't get my buttercream completely smooth, and that my fondant ripples at the bottom of every cake. I have no idea what I'm doing wrong. I've seen directions in books, in videos, and I'm doing what they say, but it just never comes out perfect.

Can you offer any suggestions?

BC issue - have you looked at Sharon Zambito's YouTube videos on BC. Her method has helped me tremendously. My husband gave me this video at Christmas - http://www.sugaredproductions.com/_product_85116/buttercream_dvd


Fondant - Is it possible the fondant is stretching too much? That would be my first guess.
