Hi folks i wonder if anyone can help me? I have been asked to make a two tier 90th birthday cake. I am fairly new to this and my friend has requested that the bottom cake should be 12 inches square.
What i really want to know is how do i scale the ingredients up for my fruit cake from an 11 inch to a 12 inch cake as most books only go upto the 11 inch size fruit cake.

Sorry, not sure what you are wanting. A recipe large enough for a 12" pan? If you are doing a 2 layer cake you are going to need a lot of batter. Make a couple batches of the recipe you have and then mix those batches together in a large bowl and measure out into your pans from there. I hope that helps... A 12"square cake is a 1 1/2 lb mixture,if you have a recipe for 1/2lb(8") and 1lb(10"),add the two together,its a big cake for fruit.If you need my recipe let me know.
