During the summer months here in FL I have the hardest time with frosting cakes. It's humid and very hot and the frosting seems to melt right of the cakes and not hold form.
I need Ideas for frosting that works. Something that takes color well.

Thanks

You need a hi-ratio shortening based recipes like Sugar Shack's ot Tonedna's . And go light on the liquid ingredients.

1) Use a crusting buttercream and make sure you are not using trans-fat-free shortening in your recipe. There are lots of recipes on this site, the trick is finding the one that works for you.
2) Make sure to keep the cakes cool while decorating and during delivery.
3) If the cake is to be displayed outside, insist on covering it in fondant.

Yes and it better be in a well shaded area and only be out max of two hours- maybe less depending on how hot it is.

Thanks so much. I will remind the person I have in July of all of those tips. I just don't want people paying for things that may melt and fall apart. That would make me super sad for them.
