Ok all, I have been asked to make a red velvet cake for a wedding. I am having trouble finding a good frosting flavor and that will not melt. Her wedding is in july and is outside. I have not worked w fondant yet and am wondering how it will withstand the heat. Any sugestions?

Cream cheese is the traditonal frosting for red velvet, here is a recipe that will with stand the heat and does'nt require refrigeration.
You can use fondant over it and, fondant does well in the heat also.
