I made a batch of IMBC yesterday which I put it in the fridge to use this morning. I left it out for a bit this morn and have just started rewhipping it in my mixer and it has gone a darker yellow crumbly wet-ish cottage cheese consistency It was totally fine yesterday.
Is it fixable? It doesn't look like it to me but did i do something wrong?
Just keep whipping it. It was just a tad bit too cold still when you started whipping it. It will smooth out and return to normal after a few mintues. You can help it along with a food torch or putting you mixer bowl over boiling water for a few minutes.

yeh I didn't have time to wait so it was still a little bit chilled but i just freaked out a bit when it turned into that yellow mess lol Did was you said and i revved it up and whipped it's butt off and it's all good now phew! I thought it was a goner! Thank-u!!
