Hi all, I live at the coast and we have had rain and cloudy weather for the past week and I cant get the marzipan on my christmas cakes to dry. They are very sweaty, I urgently need help as they are for a market.

I haven't tried this with marzapan, but I have had success with fondant. I live right near the water in New England and run into issues with fondant drying in humid and wet weather. What I do is place the cake/figures in a small spare room that I have and turn on a portable dehumidifier with all doors and windows shut. The room will get very warm, but it has worked like a charm to dry the fondant.
