can you freeze gingerbread cookie dough? i want to get a lot of bathches made for now and then when i have time in a couple of weeks i will start all my baking.

I made my dough several weeks ago and put it in the freezer. Took it out last week to bake and it was fine. I did leave it in the fridge to thaw. HTH

Yep freezing is fine. You can even freeze your dough already cutout and then just place on cookie sheet and bake.
